Lamb:

1 (8-rib) rack of lamb

1 ½ teaspoons salt

½ teaspoon cracked black pepper

1 tablespoon olive oil


Truffle & Herb Rub:

yellow onion, peeled and chopped

4 garlic cloves, peeled

½ cup fresh parsley

1 tablespoon fresh thyme

2 teaspoons fresh rosemary

2 teaspoons TRUFF Black Truffle Oil

1 tablespoon olive oil

Black Truffle & Herb Rack of Lamb Recipe

Impress your friends and family with this flavourful rack of lamb. The lamb rack is seared, roasted, and slathered in a savoury rub. This rub features our black truffle oil, blended with onion, garlic, parsley, thyme, and rosemary, elegantly infusing this dish with earthy, aromatic, and herbaceous elements. 

The recipe can easily be scaled up to cater for a larger group. It’s a perfect choice as the main, centre-of-the-table attraction or portioned for a crowd-pleasing appetiser. Delicious, succulent, and awe-inspiring.
Instructions:
  1. To make the rub, place the onion, garlic, parsley, thyme, rosemary, truffle oil, and olive oil into a food processor. Pulse until finely minced and set aside.

  2. Pat the lamb rack dry with paper towels and allow it to rest at room temperature for 30 mins. Once rested, season with salt and pepper.

  3. Preheat the oven to 220°C (fan-forced if available).
  4. Heat the olive oil in a large, oven-proof frying pan over high heat. Once the oil is shimmering hot, add the lamb rack and sear on all sides.

  5. Remove the pan from the heat and coat the lamb rack with the rub. Place the pan in the oven and roast until the internal temperature of the lamb reaches 46°C (for medium-rare), about 20 minutes.

  6. Remove from the oven and let the lamb rest for 15 minutes before slicing and serving.
