INGREDIENTS

Cauliflower Pizza Crust: 

1 head cauliflower, cut into florets 

1 egg 

¾ cup mozzarella cheese, grated 

¼ cup parmesan cheese, grated 

1 ½ tablespoons cornstarch 

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon dried oregano 

½ teaspoon salt 

Pinch of black pepper 


Pizza toppings:

⅔ cup mozzarella cheese, grated 

2-3 tablespoons blue cheese crumbles 

2-3 tablespoons TRUFF Buffalo Sauce 

2 tablespoons fresh tomatoes, diced 

2 tablespoons fresh shallots, chopped 

2 tablespoons pickled red onions, drained and sliced 

Leafy celery tips, blue cheese dressing, and TRUFF Buffalo Sauce, for garnish and dips

Buffalo Cauliflower Pizza

Looking for a low-carb solution to satisfy those pizza cravings? Then you must check out this TRUFF’d-up recipe for cauliflower pizza. We used our newest creation, TRUFF Buffalo Sauce, to infuse a unique twist on the classic combo.

 

This zesty black truffle buffalo sauce pairs so well with the savoury veggie-centric crust, mozzarella cheese, blue cheese, fresh tomatoes, and sweet-tart pickled red onions. Keep this pizza on the vegetarian-beat, or feel free to ad-lib with your favourite buffalo pizza-themed toppings. The sky's the limit when TRUFF Buffalo Sauce is involved! 

 

Instructions:

 

  1. Place cauliflower florets in the bowl of a food processor and pulse into rice-sized pieces. Fill a large pot, ⅔ full with salted water, and bring to a boil over high heat.

  2. Once boiling, add the cauliflower, and cook for 2 minutes. Drain and rinse with cold water. Place the cauliflower in the centre of a clean kitchen towel and squeeze to release as much liquid as possible (you want that cauliflower to be as dry as possible). 

  3. Preheat the oven to 200°C and line a large cookie sheet with parchment paper. Transfer the drained cauliflower to a large bowl. Add the egg, mozzarella, parmesan, cornstarch, garlic powder, onion powder, oregano, salt, and pepper to the bowl and, using your hands, mix to combine.

  4. Transfer the mix to the prepared cookie sheet and press into a thin, even circle. Place the sheet in the oven and bake for 20-30 minutes or until golden brown and moderately crisp.

  5. Remove from the oven and sprinkle with mozzarella and blue cheeses. Drizzle with the buffalo sauce and return to the oven. Bake for 15 minutes or until the cheese has melted. 

  6. Remove from the oven and top with tomatoes, shallots, and pickled red onions. Garnish the pizza with leafy celery tips and serve with blue cheese dressing and TRUFF Buffalo Sauce on the side for dipping and extra drizzling.
