INGREDIENTS

Roasted Cauliflower: 

1 head of cauliflower, cut or grated into tiny floret pieces 

1 teaspoon ground cumin

1 teaspoon paprika 

1/2 teaspoon garlic powder 

1/2 teaspoon onion powder 

1/2 teaspoon salt 

1/4 teaspoon dried oregano 

2 teaspoons TRUFF Black Truffle Oil 

1 tablespoon TRUFF Hotter Sauce 

1 tablespoon olive oil 


Spicy Avocado Sauce: 

1 each avocado, peeled 

1/2 cup TRUFF Spicy Mayo 

1/2 cup fresh coriander, chopped 

3 tablespoons lime juice 


16 corn tortillas, warmed  

1/4 cup goats cheese crumbled

1 cup red cabbage, shredded 

1 cup tomatoes, diced 

1/2 cup radish, thinly sliced 

1 lime, cut into wedges

Cauliflower Tacos with Spicy Avocado Sauce Recipe

This veggie-friendly taco recipe will *not* have you asking…where’s the beef? We crafted a super savoury seasoning blend for this cauliflower. A combination of cumin, paprika, garlic powder, onion powder, oregano, and two of our favourite TRUFF products; TRUFF Hotter Sauce and Black Truffle Oil. These two ingredients pack in so much flavour, it is almost ridiculous how good this tastes.

The Black Truffle Oil puts the aromatics and flavour of black winter truffles front and centre, adding additional umami notes. The Hotter Sauce not only brings the heat, it adds depth with the blend of jalapeños, red chilli peppers, agave, and red habanero powder. For the spicy avocado sauce, we partner avocado, coriander, and fresh lime juice with our TRUFF Spicy Mayo. Adding zest and subtle heat as well as freshness.
Instructions:
  1. Preheat oven to 200°C and line a large baking sheet with aluminium foil. Place cauliflower, cumin, paprika, garlic powder, onion powder, salt, oregano, Black Truffle Oil, Hotter Sauce, and olive oil, in a large bowl, and toss to coat and combine.

  2. Transfer the seasoned cauliflower to the prepared baking sheet and spread out in an even layer. Place in the oven and roast for 20-25 minutes or until the cauliflower is tender and lightly browned. Remove from the oven and set aside. 

  3. While the cauliflower is roasting, place avocado, TRUFF Spicy Mayo, coriander and lime juice in a food processor and blend until smooth. 

  4. Divide roasted cauliflower between warmed tortillas and top with goats cheese crumbles, red cabbage, tomatoes, and radishes. Drizzle with spicy avocado sauce and serve with lime wedges on the side.
