INGREDIENTS

200g raw ground breakfast sausage

1/4 cup red capsicum, diced

1/4 cup green capsicum, diced

1/4 cup yellow onion, peeled and diced

1 garlic clove, peeled and minced

6 eggs

250g full-fat cottage cheese

1/2 cup gruyère cheese, grated

1/2 teaspoon salt

1/4 teaspoon cracked black pepper

1 tablespoon TRUFF Hotter Hot Sauce

1 cup fresh spinach, chopped

Fresh chives, chopped, for garnish

Fiery Sausage & Cheese Egg Bites Recipe

These sausage, cheese, and veggie egg bites are sure to kickstart your morning (waking you up faster than a cup of coffee). We dosed these tasty eggy treats with a hearty glug of our Hotter Hot Sauce.

 

This zestier version of our OG hot sauce uses a combination of red chilli peppers and habanero chilli powder (in addition to our signature truffle infusion), providing a ‘less sweet, more heat’ approach. This higher-heat addition pairs perfectly and balances the richer ingredients (gruyère cheese, cottage cheese, and breakfast sausage), while enhancing the sautéed capsicum, onion, and garlic.

 

Instructions: 

  1. Preheat the oven to 180°C and lightly spritz a muffin tin with cooking spray, then set aside.

  2. Heat a large non-stick frying pan over medium heat. Once hot, add the sausage and cook for 5 minutes.

  3. Add the capsicum, onion, and garlic to the pan, stir to combine, and cook for another 5 minutes or until the sausage is cooked through and the veggies are tender. Remove from the heat.

  4. Place eggs, cottage cheese, gruyère, salt, pepper, and hot sauce in a large bowl. Whisk until blended. Add the spinach and the sausage-veggie mix to the bowl and stir to combine.

  5. Divide the egg mixture between the muffin cups, filling each half full. Place in the oven and bake for 20 minutes or until the egg cups are cooked through and fluffy.

  6. Remove from the oven and set aside to cool on a wire rack.

  7. Once cooled, gently remove the egg cups from the muffin tin and place them on a serving platter.

  8. Sprinkle with freshly chopped chives before serving.
