Instructions:

Preheat the oven to 180°C and lightly spritz a muffin tin with cooking spray, then set aside.

Heat a large non-stick frying pan over medium heat. Once hot, add the sausage and cook for 5 minutes.

Add the capsicum, onion, and garlic to the pan, stir to combine, and cook for another 5 minutes or until the sausage is cooked through and the veggies are tender. Remove from the heat.

Place eggs, cottage cheese, gruyère, salt, pepper, and hot sauce in a large bowl. Whisk until blended. Add the spinach and the sausage-veggie mix to the bowl and stir to combine.

Divide the egg mixture between the muffin cups, filling each half full. Place in the oven and bake for 20 minutes or until the egg cups are cooked through and fluffy.

Remove from the oven and set aside to cool on a wire rack.

Once cooled, gently remove the egg cups from the muffin tin and place them on a serving platter.
- Sprinkle with freshly chopped chives before serving.
