INGREDIENTS

2 teaspoons olive oil 

500g raw chorizo sausage 

1 tablespoon TRUFF Jalapeño Lime Hot Sauce 

1 teaspoon taco seasoning 

1 bag yellow corn tortilla chips 

1 cup corn kernels, drained 

1 cup canned black beans, drained and rinsed 

½ cup red onion, peeled and diced 

¼ cup sliced black olives 

1 red jalapeño, sliced 

1 green jalapeño, sliced 

1 cup shredded Cheddar cheese 

1 cup shredded Monterey jack cheese


Sour cream, salsa, guacamole, lime wedges, and fresh coriander or spring onions (optional), for topping, dipping, and garnish.

Loaded Nachos with Chorizo & Jalapeño Lime Hot Sauce 

Everyone loves nachos! If you’re a fan of both heat and flavour, then you are really going to love this recipe. We seasoned the chorizo with a hearty glug of our Jalapeño Lime Hot Sauce, adding a bright and spicy vibrancy to this already tasty sausage. 

 

This further infusion of flavour ensures that every, topping-loaded, bite is absolutely delicious. We even doubled-down on the jalapeños, adding a smattering of fresh red and green jalapeños to the mix as well as a duo of shredded cheeses, corn, black beans, red onions, and sliced black olives.

 

Instructions:

 

  1. Preheat the oven to 200°C.

  2. Heat oil in a large frying pan over medium-high heat. Once hot, add the chorizo and cook, stirring occasionally, for 3 minutes or until mostly cooked through. Add the hot sauce and taco seasoning, stir to combine, and continue to cook until the chorizo is thoroughly cooked through, about another 3 minutes. Remove from the heat and set aside.

  3. Place a single layer of tortilla chips in the bottom of a 33 x 23cm baking or casserole dish. Top the chips with a couple of hearty spoonfuls of cooked chorizo, corn, black beans, onion, olives, jalapeños, Cheddar cheese, and Monterey Jack cheese. Repeat this step for a second and third layer.

  4. Place the baking dish in the oven (uncovered) and bake for 15-20 minutes or until the cheese is melted. Remove from the oven and serve with your favourite condiments on the side for dipping and dunking.

  5. Garnish your nachos with fresh coriander or chopped spring onions (optional)

  6. If you don’t have a taco seasoning mix, here’s a quick recipe: 1 tablespoon chilli powder, 1 teaspoon of paprika, cumin, garlic powder, onion powder and salt. And ¼ teaspoon dried oregano, cayenne pepper and black pepper. Simply mix these ingredients together, and you're good to go!
