Imagine a crispy toast, with a melt-in-your-mouth combination of butter and TRUFF White sauce.
Topped with creamy cream cheese, ham, freshly chopped shallots, perfectly poached eggs, and a sprinkle of rocket, every bite is a burst of flavours and textures that will have your mom feeling loved and appreciated. Best of all, this meal comes together in under 30 minutes, leaving you more time to pamper the queen of your heart!
Instructions:
  1. Place butter and TRUFF White in a microwave safe bowl, cover with a bit of paper towel (in case of splatter) and melt (typically 20-30 seconds).
  2. Brush butter on to sour dough slices and toast in a preheat pan over medium high heat. Toast for 3-4 minutes (flipping halfway through) or until crispy and golden brown.
  3. Bring a medium pot filled with water to a low boil over medium high heat and stir in apple cider vinegar. Carefully crack eggs into liquid and poach for 3-4 minutes (for a little runny yolk).
  4. Carefully remove the eggs with a slotted spoon and drain on a paper towel. Spread cream cheese onto toasted bread and top with poached eggs, ham, shallots and rocket.
